Does real honey freeze?
There are those who assume that the frozen honey has been mixed or 'spoiled', but this is not the case.
The crystallization (freezing) process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallize over time with no effect other than color and texture. Moreover, the crystallization of honey preserves the flavor and quality characteristics of your honey.
In simple terms, we can say that crystals are natural sugars that come 'undissolved' in honey.
HOW TO STOP THE CRYSTALIZATION OF HONEY?
Where you store honey can make a big difference in how fast it will crystallize. Lower temperatures encourage faster crystallization, so don't put your honey in the fridge! It is always best to store honey at room temperature in a cupboard away from direct sunlight.
HOW TO MELT CRYSTALIZED HONEY?
The warm water method is all you need to melt your Justbeemade honey. Put your jar of honey in a bowl and add three-quarters of the jar of warm water. Stir your honey slowly and continuously using a wooden spoon, and you will see that it starts to become fluid over time.
